Yesterday I came out to my kitchen and found that someone had yanked a banana too hard from the bunch and somehow three others peeled on one side.
I was just so tired yesterday I didn’t want to do much cooking. In fact, I didn’t even cook dinner, everyone just fended for themselves. But I had to do something with these bananas. Looking at the peel off on one side was really hurting my eyes. The easiest thing I could think to make was Che Choui. It’s very easy to make and you can eat it hot or cold. It’s more like a sweet soup when you eat it hot and more like a pudding after it’s been refrigerated. Both ways are delicious!
I already had all the ingredients at home except for the coconut milk. Here’s the coconut milk and tapioca pearls I used.
I like to cut thick slices of banana so it doesn’t get too mushy from cooking.
You’ll know the tapioca is ready when it’s all translucent.
Here’s the recipe.
4 cups water
1/4 cup tapioca
1 can of coconut milk
1 tsp vanilla extract
1/3 cup of sugar (can put less if you like)
1 tsp salt (if you use less sugar you probably won’t need as much salt either)
6 bananas, sliced
Pour 4 cups of water into a medium pot and add the tapioca pearls. Bring water and pearls to a rolling boil and turn the heat to medium-low. Stir occasionally so the pearls don’t stick to each other. When the pearls are all translucent add the coconut milk and vanilla extract then stir. Add the bananas, sugar and salt. When the bananas are heated through (they’ll turn a bit gray and that’s normal) you’re done! You can sprinkle a bit of toasted sesame seeds and crushed peanuts on the top when serving.
Since Monday was a holiday and no one in the family had to work we all decided to go cherry picking. I had seen Facebook posts from Lodi Blooms which is only about 40 minutes away so it seemed like the perfect place to go. I’ve been to a couple other places where you pick your own fruit but the experience was nowhere near as fun as this place. Maybe it’s because I went right on time and the fruit was plentiful, perfectly sweet and crunchy. Either way everyone in the family picked A LOT.
I know we won’t be able to eat it all unless some of it gets cooked so I had to figure out what to make. I didn’t want to make anything that took too long so I decided to make blondies. These are so decadent from the chocolate and the bursts of cherry is just so delicious! The ingredients are simple and it’s super quick to make!
1 cup (2 sticks) of melted butter
2 cups of brown sugar, packed
2 large eggs
4 tsp vanilla extract
1 tsp salt
2 cups all purpose flour
2 cups halved cherries
1 1/2 cups semi-sweet chocolate chips
Preheat oven to 350º
Grease and flour a 9×13″ pan (I used a pyrex)
Melt the butter in a microwave in 20 second increments until it is completely melted. Put the butter in a large bowl and mix in the brown sugar until it’s blended in completely. Crack 2 large eggs into the bowl and whisk until fully incorporated. Add the vanilla extract and stir. Add the flour and salt until everything is mixed in well. Fold in the chocolate chips and cherries. Pour into the prepared pan and bake for about 35 minutes or until the center looks cooked all the way and inserting a toothpick that comes out clean.

Elsa has been asking for a hatchimal for days… She only knows about it because I told her about the darn things. It’s possible that I really just wanted one for myself and am living vicariously through her. If you don’t know what a hatchimal is, it’s like a real life tamagotchi! Remember those little electronic dinosaur things you had to take care of? If not, they looked like this:

After surprising her with the hatchimal we went to Cool Patch Pumpkins in Dixon which wasn’t super fun but she got to pick out a pumpkin. If you’re in the Sacramento area with young kids, I’d recommend Fog Willow Farms instead. They’ve got activities for the kids and animals they can pet. But if you’re wanting to do a corn maze (which we didn’t feel comfortable doing with Elsa) Cool Patch has a world record one that costs $15/person to check out.

Time always seems to get the best of me. Thank GOD I only have 1 year left before I get that bachelors degree. It always seems that it takes me about 1 year for another post but it makes sense because I get a little break from school during the summer. What’s changed so far… Not too much. Started a job with Apple that’s been great. Gained all the weight I lost last year so back on the workout grind, trying to not fall off the wagon this winter is my goal. Now that I know so much about health and fitness I know that there’s never an endgame. I can’t just give up after I hit a goal, just gotta keep going and even though there are setbacks, don’t let it bring you down. Let’s hope I’ll stay on top of my blogging and post some recipes and other fun stuff again. xoxo
I’ve been sick. Because Elsa is in preschool she gets sick, literally, every other week. And when she brings home those precious little bacteria gems, I get sick too. I’ve been really tired… and last night I just didn’t want to cook. So what can I eat that is fast, inexpensive, and won’t drown me in calories? Store-bought roasted chicken!!! And since corn is still in season and CHEAP, I picked up some of that and green beans that I could steam in the microwave. It was a tasty and effortless meal.
After dinner I went for a swim with my friend Gigi. She got there before I did so she was able to do more laps than I, but hey, being that I am still sick… at least I got some workout in. 😛
Also, I just want to announce that I’ve finally gone under the 120 mark. It took me a little longer than I expected, but with hard work and dedication I eventually got there. I am now down 16lbs from my starting weight. My next goal is to get to 115. I hope it won’t take me too long. 😀
I have this debate with my relatives every now and then about who is better, Freebirds or Chipotle? For me, it is Freebirds, hands down. From the customer service to the taste of the food, everything is just so much better. I know for sure because I just had Freebirds last night and Chipotle for lunch today… and I was just so disappointed with what I got this afternoon.
Anyway, I usually get a kids burrito because it won’t be 10,000 calories so there is no guilt. But for the first time yesterday, I got a salad. It was so tasty and fulfilling and they use mixed greens-my favorite for this kind of meal. I also couldn’t believe that the whole salad was only 350 calories! I split it into two meals though, dinner and late night snack. So if you’re jonesing for a good salad that won’t take up your entire daily caloric value for the day, get yourself a lite chicken bowl from Freebirds!
